Your Best Body: {Superfood} Sunflower Seed Muffins

Sunflower seeds are rich in minerals, vitamin E, and a perfect morning or afternoon snack to keep your body at its best! With a splash of fruity blueberry craisins and whole wheat flour, you will get your at home remedy of antioxidents that will neutralize the free radicals that can potentially damage your body’s cells and speed up the aging process. {Get other healthy recipes here!}

Sunflower Seed Muffins

Makes 12 / 86 calories / 5 mg vitamin E/ 1.6 g fiber

6 tbsp canola oil

1 cup whole wheat flour

1 tbsp baking powder

1/2 cup light brown sugar

2 cups rolled oats

heaping 1/2 cup blueberry craisins

heaping 1/2 cup sunflower seeds

2 eggs

generous 1 cup milk

1 tsp vanilla extract

 1. Preheat oven to 400 degrees F/ 200 degrees C and line pan with paper cases.

2. Lightly beat eggs, then beat in the milk, oil, and vanilla extract.

3. In a separate bowl, sift together the flour and baking powder. Stir in the sugar, oats, blueberry craisins, and sunflower seeds.

4. Make a well in the center of the dry ingredients and pour in the beaten liquid. Stir gently until mix is combined; do not overmix.

 4. Spoon the batter into your pan. Sprinkle the remaining sunflower seeds on the top.

Bake for 20 minutes until golden brown.
